What are you meal planning/prepping for the week?

I know we will have pasta with meat sauce one night and our favorite chicken meatballs from pinch of yum another night. Would like at least one more “real meal” this week and ideas of stuff to prep for adult lunch.

No one else eats seafood so I never cook it but will live vicariously through you guys if that’s what you’re having…

Japanese curry with ground beef
Spicy marmalade chicken with sweet potatoes
Cameroonian chicken with plantains
Irish stew
Pork meatballs with ginger and fish sauce

I haven't made a plan for this week yet, but last week we had:
Pork butt in the instant pot with garlic, lemon and thyme, with mashed potatoes and steamed broccoli (with enough leftovers for two adults to take lunch the next day)

Thai green curry with chicken and vegetables, over rice (with leftovers for lunch again)

Salmon, egg noodles, green salad, green beans
(Used leftover egg noodles with frozen meatballs and a can of pureed tomatoes for lunch)

Ground pork and lentil stew with carrots, celery, chard (enough leftovers for lunch, plus a quart in the freezer for a future lunch or dinner)

I might put a whole chicken in the instant pot one night this week. It's a great way to have leftover chicken for lunch or make chicken enchiladas on another night.

Whatever is on my home chef schedule and tuna salad for lunches. So happy I don’t need to stress over this anymore.

Do you buy all the ingedients fresh for the week in one trip or have the meats frozen and available? And what about vegetables?
I would have a hard time storing all these raw ingredients in the kitchen fridge.

Do you buy all the ingedients fresh for the week in one trip or have the meats frozen and available? And what about vegetables?
I would have a hard time storing all these raw ingredients in the kitchen fridge.

I bought 1 pound each of ground beef and pork , 2 packs of chicken thighs, some lamb for the stew, and the few vegetables and herbs needed. It occupies less than 1 shelf of my small fridge.

French onion soup
Chickpea curry over rice
Dinner salads - chicken over mixed greens with radicchio, tomatoes, cukes, hearts of palm, giardiniera, and mini mozz balls
Black bean chili
Lamb kebabs with yogurt sauce and tabbouleh

Butternut squash lasagna (good for one meal and some adult lunches)
Turkey cutlets: pan fry and I make a piccata sauce with capers and lemon. We do a side of peas and angel hair for the kids
Beef sliders and purple cabbage slaw
Chicken tenders in panko breadcumbs.Sautéed spinach and cherry tomatoes. Maybe potatoes as a starch side.
Warm Lentil salad with lots tomatoes and parsley. Chicken leftovers on top.


I bought all the meat and will make lasagna tomorrow.

I haven’t planned this coming week. This past week we did:

Butter chicken, rice, bread, broccoli
Spinach and Gruyère quiche with baguette
Chicken souvlaki pitas with rosemary fries and side salad
Chicken udon stir fry
Chicken and dumplings
Carnitas with guacamole and queso
Surf and turf (choice of burgers or salmon, rice or fries, edamame or broccoli).

Aren't we suppose to use meats within 2 at most 3 days of purchase?
