What are you meal planning/prepping for the week?

DP. I use the recipe from Natasha’s Kitchen in an 8-qt Instant Pot. We seldom have leftovers because my crew will tear into it like savages and the dogs get the remaining morsels. I save the carcass to make stock. The recipe has plenty of ideas though.

Tonight: lahmajun from the freezer, stewed green beans and tomatoes, and green salad.

Tomorrow: I have plans, I'm going to buy food and DH and kids will probably eat something fun in front of the TV.

We also have ingredients for:
Chili
Braised tofu with scallions, cilantro and either green beans or broccoli
Homemade pizza, salad
Instant pot butter chicken, either green beans or broccoli

I don’t reallly enjoy cooking but don’t want us eating crap either.


Why have I never done this??? Sounds amazing. You mean Amy's, not Annie's right? I'm a big fan of the black bean chili, and I make that and load it up with shredded cheese, onion and sour cream. But this sounds amazing too.

On Sunday I roasted 2 chickens and shredded the meat. I browned a couple of pounds of ground beef with taco seasoning and tomatoes. And I roasted a couple trays of broccoli/cauliflower/sweet potatoes/onions and made a pot of cous cous.

My plans with this are:

taco night (chicken, beef or veg)
quesadilla night (chicken, beef or veg)
chicken pesto bowls (chicken over cous cous with roasted veggies, tossed with Costco pesto)
Mediterranean bowls- chicken or just veg, with roasted veg, cous cous, diced cucumbers and tomatoes, crumbled feta, hummus, drizzled with tahini (I thin it out with a little water)

I haven’t really planned for this week and am feeling very unmotivated.

I think
Tuesday grilled salmon, orzo, peas
Wednesday black Bean and cheese and scallion quesadillas with tomatos and mashed avocado
Thursday beef stroganoff with noodles if I can manage that. Have some broccoli I can roast.
Friday mushroom and machego empanadas

U have some arugula and apples for lunch salad one day, leftover cabbage soup for another day, and Icelandic yogurt with granola and fruit another day.

I'm the PP who mentioned it, and that's the same recipe I use! I do like to put it under a broiler to crisp the skin afterward.

We have it for the first meal just as regular chicken pieces, with the kind of sides you'd have with roasted chicken - mashed potatoes, roasted broccoli or brussel sprouts, salad, etc. If there are any leftovers, I shred them for enchiladas, tacos, chicken salad, sandwiches, or pasta. Then the stripped bones go back in the instant pot to make more broth.
