What did you cook for dinner, cost, time?

I’m just curious what other people do. Tonight’s dinner:
Kevin’s Thai coconut chicken from Costco, $15
White rice cooked in broth, $2?
Steamed broccoli, $2
Yogurt for a kid, $3

This fed two adults and two kids. It took about 30 minutes start to finish. It was ok and pretty average for us. It was probably inexpensive compared to a lot of dinners. I’m just curious what other people are doing lately.

I did bring carrot sticks and sliced watermelon. Took me three minutes to slice it.

I just came home and made myself a grilled cheese on sourdough with tomatoes and sharp cheddar after working concessions all night to work off soccer fees. I also had a veggie and hummus bowl at the game which was actually pretty good.

Judging from the kitchen when I got home the rest of the family had burgers and popcorn and ???

Pan-fried chicken ($3 — estimating cost of what we actually ate from a big pack) with cauliflower rice ($6) and roast broccoli ($2) and lemon yogurt sauce ($2 for lemon + <$1??? for yogurt/garlic). Vanilla ice cream with fresh blueberries for dessert ($4?). Fed 1 adult and two kids with enough leftovers for a work lunch next week. Took about half an hour to make.

Last night: fettuccine Alfredo with rotisserie chicken and broccoli. It fed 3 of us plus 2 containers of leftovers for lunches.
Chicken from Costco $5
Fettuccine $5
Broccoli $1
Alfredo sauce $6
$17 and we still have rotisserie chicken left over even after the 2 extra lunches.

A rift on miso soup:

Spinach from garden - $0
Mushrooms from local farm - $6
Tofu - $1.45
Radishes from garden and Aldi - $1
Miso - $1.50 worth of container
Rice Ramen noodles from Costco - $3 worth of package
Ginger and garlic…? Maybe $1 worth?

=$15 but it makes at least 6 servings so we only ate half last night, $7.50

I had one small yellow potato that I "baked" in the microwave for three minutes. I topped it with an avocado and greek yogurt. Probably $2.

DH and child 1 were at an extracurricular and got food at a coffee shop.

Child 2 didn't want to eat and then later finished up leftover cottage pie: ground turkey, onion, corn and mashed potato. (that whole meal took longer, didn't cost much and provided leftovers!).

He also had a nectarine which were like $13 for the bag! I see the in-season fruit and load up a bag and then when it goes through as $13! That's crazy! I'll make sure we eat them all even if I have to make them into a cobbler.

We are vegetarian, so it’s usually some combo of beans/lentil/dal, a whole grain, and a huge amount of vegetables and fruits. I buy a variety of all of these in bulk, to keep costs down— bulk bin or Indian stores for beans/grains, Costco for veg/fruit. The seasonal variations in fruit and veg, along with the variety of different whole grains out there, keeps it interesting.

Peach and nectarines aren’t in season yet. You are paying o cut of season prices for CA fruit. In the DMV, mid-late July is stone fruit season.
