Pureed/Creamy Vegetable Soup Recipe

Anonymous
Do you have a creamy or pureed vegetable soup recipe that you like? I'm in the mood for a healthy soup, my immersion blender is on standby. I poked around on Google but nothing on there seemed terribly appealing - turnips? No thank you.

Any go-to's?

Find a recipe for potato leek soup and sub cauliflower for potatoes. I like to add a bit of Patak's curry paste.

My recipe:

A couple of heads of broccoli,
1-2 potatoes (not too much—makes it slimy—can always add instant mashed to thicken),
2-3 zucchini
3 stalks celery
Chop, add to pot with chicken bouillon and a bay leaf or two
Cook until soft enough to puree
Add some spinach (for the color)
Add 2-4 tablespoons of butter
Add savory and dill, salt and pepper as desired
Take out bay leaves
Puree and enjoy

Butternut squash soup. I like versions with ginger and coconut milk, or with apples and cinnamon.

I love a butternut squash soup flavored with red curry paste and coconut milk. Garnish with cilantro, squeeze of lime, fried shallots.

Cream of asparagus. Sautee an onion in butter, add 2 bunches of asparagus (chopped with bottom part of stalk removed), 4-6 cups of broth, cook for 15 minutes then blend and add some whipping cream and salt to taste.

This is super simple, but I like turnip soup. I sauté an onion, add cut up turnips, cover in chix stock (or even just water) to cover, boil then reduce to simmer. Cook until turnips are tender. Use immersion blender. Salt and pepper to taste. My bff laughs at me and calls me "Laura Ingalls" when I make this, but I love it. It's creamy without cream.

I make a variant of this. No potatoes though or butter. Instead I add an onion and curry powder. A boat load of curry powder!
