Help me like beans

I am 50 with a lifelong abhorrence of legumes. Peas, beans, lentils, chickpeas...I can't stand the smell, can't stand the texture. I can tolerate thin green beans that are cooked al dente and a very smooth black bean dip, but that's about it. I've been known to eat around beans in chili and also in pasta fagiole, and other soups.

That said, I have recently tested very high for cholesterol and have been advised of a plant-based diet to try and avoid going on medications. I really want to make dietary changes for the better, but even the smallest black bean in a quesadilla or burrito can literally gag me.Please suggest preparations or ways to reset my taste buds.

Hummus
Black bean burgers, they are kind of mashed together
Do more soups and stews since you do okay with those.
Red lentils sort of fall apart when cooked.
I like the Real Simple red lentil curry recipe.

I think lentils, especially red lentils, are a good starter. Try getting them from an Indian restaurant if you don’t want to cook your own.

Hate to say it, but if you dislike them that much, you probably need to find a different plant-based staple. You aren’t going to eat things you despise. Fortunately there are plenty of other options.

Get a better doctor. Meat does not equal high cholesterol. Watch your carbs, eat far fewer of them, and eat lean proteins, such as chicken, fish, and even pork (they farm it lean now). Life is too short to be gagging at your food. If you really are determined to avoid meat, look at pressed tofu as a meat substitute.

The real thing you shouldn't do is eat something high in fat, sugar, and refined grains.

Are there other things you could cut out? DH is generally a pretty healthy eater but has genetically related high cholesterol. He has reduced potato chips and ice cream for several years in his diet and managed to get cholesterol totals under 200 with no meds. Seems unfair that he’s had to do this given his extremely high fitness level but it definitely worked. He is a pescatarian which also helps.

Perhaps you could tolerate some of the pastas made out of beans.

You know when my cholesterol was the highest? When I first became vegetarian years ago. Vegetarian does not necessarily mean healthy. I still need to watch my cholesterol. You can do healthy and still eat some lower fat types of meat like chicken and fish. I like skinny taste bc you can pick the type
of diet and main ingredients. The only bean I really like btw is black bean. A lot of Latin American cuisine (Brazilian, Cuban, etc) have good recipes/spices that complement black beans well. Also eat foods you do like (vegetables, fruits, high quality grains) that are high in fiber. Good luck.

Annie’s brand has a really good lentil/vegetable soup. I drain it slightly band eat it over rice. My kids like it too. We eat black bean nachos or quesadillas big if you really don’t like them not sure that would work for you.

Chances are good that you have other food restrictions/preferences that you would need to divulge before we can really give you suggestions.

Listen to your body, OP. If it doesn't like beans, maybe you have a genetic predisposition not to tolerate them too well.

You can correct your cholesterol perfectly well without a bean diet. Just avoid animal fats. There is a universe of fruits and veggies you can eat every day! Why force yourself to like beans?

I like beans, but they give me gastro-intestinal issues so I don't eat them, except a small portion of lentils now and then. I eat a healthy diet low on animal fat and processed foods, and have normal cholesterol levels.
