It's that time of year - anyone have fave kid friendly zucchini recipes to share?

Title says it all. Any ideas would be welcome!

So far I've done zucchini baked fries with spices, fritters w/feta and mint, zucchini noodles and zucchini bread. I will shred some and freeze. Other things to try? Plants are really gearing up, think I overplanted.

Zucchini bread/muffins of course.

I also love zucchini turkey burgers/meatballs. Use ground dark meat turkey. This is my favorite recipe. Stick with the turkey/zucchini ratio and feel free to experiment with different herbs and spices

I love thyme and garlic roasted zucchini as a side.

Add shredded zucchini to broken egg mixture and make an omelette or scrambled

I have one bookmarked for zucchini parm. Layer thin slices of zucchini with pesto and parm , top layer gets mozzarella as well . Bake at 375 for 20 minutes.

Tuscan Vegetable Soup
(You can throw in some dried cheese tortellini instead of the elbows--my kids love it)

1-(15-ounce) can low-sodium canellini beans, drained and rinsed
2 tablespoon olive oil
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 small zucchini, diced
2 clove garlic, minced
1 tablespoon Italien seasoning
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup white wine
2 cups chicken stock
2 cups water
1/3 elbow macaroni
3 cups chopped baby spinach leaves
grated Parmesan, optional

Heat the oil in a large soup pot over medium-high heat. Add the onion, carrots, celery with salt and cook 6 minutes, stirring occassionally. Add zucchini and cook 2 minutes. Add garlic and dried herbs and cook 1 minute.
Add the wine, broth and water and bring to a boil. Add macaroni and cook 7 minutes. Add the beans and the spinach leaves and cook until the spinach is wilted, about 3 minutes more.
Serve topped with Parmesan, if desired.

Veggies quiche. Sauté some veggies (onion, zucchini, peppers, mushrooms), put them in the crust, cover with some cheese (Monterey Jack is good) and add your custard (egg and milk mixture).

I also add sautéed diced zucchini along with other veggies to store bought marinara to get more veggies

We do something similar and my 4 and 6 year olds will eat it. Slice them super thin, like with a mandolin thin, and then salt them and let them sweat the liquids out a bit. Then pat dry. we dredge in egg and then dip in breadcrumbs/Parmesan. Drizzle with olive oil and they get nice and crispy at 400. Each one of my kids will eat a full zucchini this way.

Zucchini latkes. I sub ground flaxseed for flour and serve with sour cream.
