Cut zucchini thin, fry in sunflower oil. Store over night so they soften. Heat in pan, season with salt and pepper to taste, add a little butter. Serve with spaghetti and shave some cheese on top.

Middle Eastern fried zucchini. It's so delicious.

Slice pretty thin. Lay slices on a platter and salt both sides a little. Let it sweat 5 minutes or so. Dip in flour. Fry in some olive oil, not submersed, more like sautee, until brown. Like mostly dark brown. You will need to run your hood vent, and clean off the pan for each time you refill it or else gets smokey.

Maybe basically what you’re already making but I love this: https://cafedelites.com/parmesan-crusted-zucchini/

Consider culling plants if you can’t find a place to take donations. I know you know this but zucchini gets so out of control so quickly.

Make a big batch of minestrone and freeze (omit the pasta and cook/add pasta to heated soup when you are ready to serve).

You can add finely diced zucchini to bolognese, and you can freeze that, too.
