[/quote] We do something similar and my 4 and 6 year olds will eat it. Slice them super thin, like with a mandolin thin, and then salt them and let them sweat the liquids out a bit. Then pat dry. we dredge in egg and then dip in breadcrumbs/Parmesan. Drizzle with olive oil and they get nice and crispy at 400. Each one of my kids will eat a full zucchini this way. [/quote]
