Eggwhite in a carton vs. eggwhite from a real egg.

Does anyone notice the eggwhite in a carton from the grocery store has a different taste than the eggwhite from a crack open egg with the yolk removed? In other words, the eggwhite in a carton tastes so much worse than eggwhite from an actual egg crack open with the yolk removed. I can clearly taste the difference. I read the label on the carton and it doesn't seem to have anything other than actual eggwhite but the eggwhite carton does have to go through the pasteurization process to kill bacteria, whereas they don't do with the actual whole egg. Not sure if that changes the taste in the egg but the eggwhite in the carton tastes awful.

Thoughts?

The egg white in the carton can take on the carton flavor and also is aged and has likely gone through some temperature fluctuations.

Some people are negatively affecting my dietary cholesterol, some people just don’t like the yolk.

Egg white in a carton has been pasteurized so it’s safer if using raw (ie when making royal icing). I only use it for that.

I buy the 6 pack of cartons from Costco. Actually cheaper than buying a dozen eggs and separating. They are free range and pasteurized. No ingredients other than egg whites.

My kids don’t like the yolk. I don’t really either. Plus it is great protein to add into smoothies and doesn’t need to be cooked for safety.

Because of the pasteurization process, the eggwhite loses its flavor and doesn't taste very good.


You can see it in other products such as Coconut water as well.  Vita Coco coconut water is pasteurized while Harmless Harvest coconut water is not.  That's why Harmless harvest coconut water taste so much better than Vita Coco.

It tastes and cooks exactly the same to me. Sometimes I’ll have a egg whites from eggs if I needed a yolk and I’ll cook the carton stuff right besides the white just cracked and I cannot tell the difference

I use Nature's Promise eggwhite brand carton from Giant and cook it with spinach every morning for breakfast vs. Nature's Promise real eggs with the yolk removed. My wife, my kids and I could definitely tell the difference between the two. The real eggs just taste so much better. Everyone in my family could tell the difference with the blind fold test. The one from the carton is definitely more bland and a bit flat.

I once heard that those cartons of egg whites came from “breakers” and while I’m sure they’re safe, I’ve never wanted to use them. It’s like Lunchables - the dregs of food.

Breakers or broken eggs is just the term for eggs that are sold specifically as liquid. They are used for egg whites in the carton and for places like fast food or other food service that make scrambled eggs. They use them for food safety reasons and probably convenience reasons as well.

An egg alone doesn’t have much protein. Best to take an egg and add a bunch of egg whites.

Never tried eggs from a carton, but it certainly doesn’t sound tasty.
