I am dreading defrosting meat for dinner. Please suggest vegetarian dinner options using any combo of these ingredients. We have every spice imaginable.

| Cous cous with fresh or canned tomatoes, frozen peas and Italian parsley, chopped onions, mixed with olive oil and/or soy sauce. You can have fresh tomatoes and mozzarella on the side for a protein. |

I'd make a quick pasta sauce with the onions, garlic, tomato paste, tomatoes, olive oil and black pepper. Serve with any pasta and top with grated parmesan and fresh parsley.
Then put frozen broccoli and sliced fresh red peppers into a roasting tin. Coat with oil and season. Cook at 400F in oven until done. Cook fresh garlic briefly in microwave. Mix with butter and herbs to make a quick garlic butter. Slice baguette (not all the way through), spread on garlic butter, wrap in foil and put in oven to cook with the roasted veg. |

Peanut noodles with broccoli, red pepper, and basil.
Make a sauce with the pb, sesame oil, rice vinegar, soy, hot sauce, garlic. Quick sauté the peppers and broccoli, cook the soba noodles, toss with peanut sauce, and sprinkle in basil. |

We did the noodle dish.
But I need more vegetarian ideas! I'm getting tired of the meat thawing hamster wheel, and eating chicken cooked 3 ways, steak, or burgers. |
Was just about to say make sure to add some sweetness to the sauce — brown sugar is good if you don’t have palm sugar. |
| You could make chili Mac: onions/garlic/bell paper chopped and sautéed in oil, add beans and canned tomato sauce. Simmer for 30 min. Serve over pasta and a sprinkle of shredded cheese on top. |
