Here's my pantry - what should I make for dinner?

Here’s my tentative vegetarian (not vegan) meal plan for this week:

Kale and onion quiche (based on on spinach quiche from Once Upon a Chef), corn soup with fresh basil (from the same website) and salad
Summer Minestrone soup (with Roma tomatoes, zucchini/yellow squash, wax beans, onion, carrot, celery) - recipe TBD, with grilled cheese sandwiches
Smoky eggplant dip and hummus with veggies and pita or naan, salad
Scrambled eggs with shishito peppers and onion and roasted potatoes
Roasted baby cauliflower with some sort of pasta or grain

Could live on rice and beans with melted cheddar or american hot sauce and sour cream. Chop up some of that avocado to sprinkle on top and it's the perfect meal
