favorite restaurant - specific twist in my question

What DMV restaurant would you want to expand (even if it’s not a chain!) somehow to other areas of the country?

Maybe you live outside dmv now, and miss your favorite?

Or maybe when you travel you wish there was a copy of that restaurant in your vacation/work town?

Maybe you love a place and think it’s deserving to be expanded so other people can love and enjoy it?

Many people don’t know this but Peruvian chicken places are pretty localized. I don’t know of anyone who wouldn’t like Peruvian chicken from time to time.

My brother lives in San Francisco and he had never heard of it.

This is a good one! Also, related but different: pupusas. Hard to find a good pupusa outside the dmv.

I like any Indian place at serves idli. I’ve lived in a few other cities and can’t get Indian food at all, or if I can, they don’t always have idli.

I agree with both of these. And empanadas or tamales. Thinking of pupusas, empanadas, tamales, I would go with a White Castle or Weenie Beenie kind of model.

That doesn’t surprise me, most of the Latino immigrants here are from Central America, and most of the Latino immigrants in California are from Mexico. The cuisines are very different.
