Inspire me about vegetables.

I'm in a stodgy beige food rut. I need to eat more veggies. Inspire me with recipes?

For digestive reasons, can no longer eat broccoli, cauliflower, asparagus, celery, or kale. Cabbage seems to be ok. Salads with softer lettuces are ok. Peas and beans are ok in moderation. Carrots are fine. Cucumbers are ok in moderation. Avocados are fine.

Spinach is fine and I love spinach, but when I think of veggies to eat and think, well, there's always spinach, I get bored just thinking about it, but new ways to use spinach in more complex recipes would be welcome.

I love tomatoes and eat them fresh constantly in season and canned/cooked in every possible way year round. But I can go for months at a time with tomatoes being basically my only veg, plus they're actually a fruit.

I like bright flavors and despite the other digestive difficulties acidic foods are not a problem. I love sweet + savory together.

I'm a pretty good cook and can improvise on ideas, but I'm just not feeling idea-filled at the moment. Any ideas or favorite recipes welcome!

Can you eat snap peas or snow peas? Both are great with Asian flavors or sautéed in olive oil, with salt.

Roasted green beans are delicious.

I like salad of chopped tomato, chopped cucumber, cubed avocado with olive oil, lemon juice, salt, pepper (addition of feta is also great)

Greens! Greens are delicious and many are nice and sturdy, to combat my “oops, forgot about that” tendencies

Swiss chard, quickly sauteed with olive oil and garlic. Squeeze of lemon over the top after cooking.

Cut kale into ribbons and “massage” with vinaigrette. I like dried cranberries, candied pecans, and goat cheese. Add beets or a hard boiled egg or cubes of sweet potato or winter squash.

Mix some ribbons of (any green) in pasta or soup

Oh, sorry, just saw the no-kale. But swiss chard or spinach would still work. Bok choy, quickly stirfried with a bit of oyster sauce or sesame oil + ginger + garlic.

OP here. I forgot to mention squash—I prefer yellow—and mushrooms, which are fine. Peppers are also fine. Keep the ideas coming!

Make vegetable fajitas with your favorite vegetables roasted like squash, mushrooms, peppers and onions if okay. Serve in corn tortillas with avocado, cheese, black beans. Salsa is a good thing too since made with vegetables and tomatoes.

if you like sweet and savory what about eggplant? Eggplant sautéed in oil, with garlic and onion and bell pepper and basil and rice vinegar/soy/ginger/sugar/chili (red, sweet chili sauce...which means no sugar, etc...).

If digestion is the main problem, consider making green juices. You get all the vitamins and minerals from the veggies in a much easier to digest package.

My DH is obsessed with Chinese takeout in the winter, and my new trick is ordering a few hot and sour and wonton soups and then adding tons of vegetables to them for lunches. Today I had a hot and sour soup with lots of cabbage, scallions and chopped parsley. It was neither hot enough nor sour enough for my taste, so I added a tablespoon of Chinkiang/black vinegar and a little of this great kimchi hot sauce: https://www.amazon.com/Surasang-Kimchi-Sauce-Preservative-Free/dp/B08L528DD9 . It was so tasty and so much more visually appealing than the usual beige/brown.

I pretty much always add vegetables to any leftovers meal or serve the leftovers on a bed of shredded cabbage or spinach or other greens.
