When well prepared, the big deal is the complexity of flavor in the broth. It takes a day or more to make well. Agree that there's a lot of cheap/ fast noodle soup out there masquerading as pho. |

There are many foods I thought I didn't like, or would just pass on, but then when I had them prepared in a certain way, turned out it was a skill/ prep issue, not an ingredient issue. Like wings, and collard greens. I also spent years thinking I could live without tomatoes, because I'd only ever had grocery store tomatoes, which are pointless. Then someone served me a bagel with a thick slice of homegrown beefsteak tomato and basil, and I did a 180.
Then there are other things that I'm pretty convinced I just don't like... such as eggplant. Everyone who loves it has been convinced that *their* preparation is the exception. Nope, still mushy/ slimy and flavorless. And mayonnaise. Plenty of people have strong opinions about what brand (Dukes) and homemade vs commercial. I'll concede that it has certain, limited applications as food glue, but only in dishes where you can't taste it. I dislike the taste. And piling on lobster. I don't dislike it per se. But if given the choice, I'll go for almost anything else on the menu. I don't get the hype. |
Pho is my sick food. Hot, salty, and lime for the throat, the spice from the jalapeños to help clear out my sinuses. I rarely want it when I'm not sick, but it's perfect whe you are. Way better than chicken noodle soup in my book. |
Hate typical Thanksgiving food and have since I was a kid. Have had it many places and nothing has changed my mind. I am a good cook and even make it most years and while the inlaws clamor for it as "the best Thanksgiving food EVER!" AND I can sort of make it to my tastes and buy premium everything I still think it is trash. I sort of nibble on a wing and go hard on the apps and call it a day. |
