Actually, I was curious about this myself. Apparently, it is because the Torah is the first 5 books of the bible. That, and they had a Jewish piano teacher who said the name also means "bearer of a great spiritual message."

Mormons use the bible, so I suppose Torah is not so odd.

(The Torah is what Christians read as the books of Genesis, Exodus, Leviticus, Numbers, and Deuteronomy.)

OK, but, the Torah (a Hebrew word, of course) is a but a part of the Bible. And the Bible, in turn, is a small part of the LDS canon. It's a peculiar pick.
