What’s your favorite chicken dish (made at home)?

I’m looking for some new chicken dishes to try. We eat a lot of grilled chicken breasts (with TJs soyaki as a marinade), and crispy mustard chicken thighs from Barefoot Contessa. I made Kung Pao chicken recently and it was good, not great. What are some of your family favorites?

For a special treat, Moroccan chicken pastilla/bastilla: flaky pastry, sweet and savoury notes, almonds and cinnamon.

Do you have a recipe? Maybe I should have specified I am hoping to get some recipes. Googling chicken dishes and trying random recipes I find on the internet has not proven to be a good strategy for good meals!

I love chicken curries. Either an Indian curry like this:

The homemade paste is excellent, but a purchased green curry paste works for quick weeknight meals

Totally understand! I will give you the two I use -- one is elaborate (and I will take to an event), and the other is a modified low key version. I used store-bought puff pastry. Trader Joe's is getting near time to have it in stock again, but really any brand will work.

An easy way to add variation to the roasted/grilled chicken theme is to mix up the seasonings. I love having a couple of Penzeys spice blends on hand for quick and easy seasoning, but you could get the same effect by mixing your own if you prefer.

Chicken breasts, cover with pesto and sliced tomatoes (or no tomatoes). Bake. With 5-10 minutes left cover with mozzarella and melt. I serve with either roasted potatoes or angel hair and spinach.
