Movies that had me in my seat even after the credits rolled as I was still mentally there:
The Color Purple
The Killing Fields
Schindler's List
The Shawshank Redemption
Dead Poets Society

There is a french trilogy that I enjoyed - Blue, White, and Red - each color is a different movie and the theme of the movie reflects that color

Movies I simply enjoyed:
Hedwig's Angry Inch
Spinal Tab

Hedwig and the Angry Inch.
Also, I think you meant: This is Spinal Tap.

Shawshank is one of my all-time faves.

Is there anyone who hasn't seen that one though?

United 93. I thought it was going to be sensational and exploitative, but it wasn't. The most intense movie I think I've ever seen.

The Big Blue
Jet Lag
The Professional

OK, I just realized that's a Jean Reno film festival. I think he's great.
