This is flat out incorrect. They may have done IVF, but they are definitely not following canon law on this. You cannot do IVF. There aren’t special rules, exceptions, you cannot do it and be in compliance. If you think the reasoning is only because of destruction of embryos, you/they clearly have not read why the Church forbids it.

The Church names a lot things people do regularly as sins. Everyone sins.
