The only name I like is Anastasia.
DH is not a fan.

My first reaction is not to name a child John Paul after a Pope.

This is going to sound ridiculous but don't really care for Catholic names like Mary Catherine. Also can't do any variations of Margaret have a niece Margaux
Do plan on calling him John Paul.
We also don't like names like Charlotte or Elizabeth or Caroline which seems to go naturally with John Paul.
DH likes Gabrielle and Elise which I'm not fond of.

people will def assume that John Paul is catholic -- you are okay with that, right?

PP here -- I think you need a really simple, classic name. If you chose a saint like name (e.g., Teresa) you are going to seem REALLY Catholic as a family. Maybe that's okay with you. I wouldn't want to mark my kids like that for life (e.g., is Margaret Mary going to want to say her brother's name to her friends in 20 years?)
Anyway, Sarah, Caroline, Elizabeth, are great -- I hear you don't like them == but to me you want one of that ilk to go with John Paul.

Also- john Paul - hard to top. Setting up an interesting gender dynamic there, at least from the outside.

Maybe it’s just me, but I just thought of it as a solid traditional name, associating it with John Paul Jones. I’m not Catholic, but although I recognize the association with the Pope, I wouldn’t have made that association myself.
