puréed chicken in place of ground chicken?

Does anyone know if I can purée chicken (in the food processor) and use it in place of ground chicken, in something like meatballs?

You can. But you may need more filler to bind it. Are you purring raw chicken or cooked?

If you mean, can you take whole chicken breasts and put them in the food processor and use them in a recipe that calls for ground chicken, yes, you can. But do not puree your chicken! Cut the chicken into chunks, then put in the food processor. Pulse for just a couple of seconds at a time. It will take only a few pulses to get "ground" chicken. Do not over do!

OP. It’s cooked chicken, from a roasted chicken. I like to roast a chicken then use the meat for a few diff meals and the bones for broth, but for some reason shredded chicken is kind of grossing me out recently (pregnancy). So just wondering if I could purée it and use it in a meatball, chicken nugget, chicken meatloaf, something like that.

Why?
You could puree the whole meal if it's digestive problem. Pureed raw chicken would be disgusting.

What do you mean by "purée"? That term is typically applied only to fruits, vegetables, or legumes that are crushed and blended into a smooth paste. As noted above, you can definitely use your cuisinart to get cooked or raw chicken to the consistence of ground chicken.

Ah, got it. Sorry about the food aversion - when I was pregnant meat made me gag, so I get it.

I think you could roast a chicken and then make nuggets or meatballs, sure. If you can stomach it I would probably not use the food processor, though. Shred the cooked chicken, then dice it finely with a knife - just chop it up on a chopping board, cutting it finer and finer. Then mix with breadcrumbs, an egg, and maybe some shredded parmesean cheese? Form into balls/nuggets and either pan fry or bake. The chicken should meld with the binder pretty well and not have a meaty texture.

It would work, but th texture of the meatballs will be very different. More light and spongy. I’d probably use for soup.

If the aversion is just handling ground chicken, then PP had a great idea, which is just chopping (not pureeing), either by hand, or in the food processor. If you’re that grossed out, it may also be an idea to buy a grinder or grinder attachment for your stand mixer if you have one.

I had the same problem with chicken when I was pregnant! I would probably find a recipe like a casserole or something that I could chop the chicken up really small and use in. Maybe a baked ziti type thing with chopped up chicken?

I had a horrible aversion to chicken while pregnant with #2. He’s 11yo and I’m still weird about chicken. Just don’t eat it, that’s fine.
