Sounds like you have never actually been to Texas. There is both Tex-Mex and Mexican cuisine. It's a big state with a ton of Mexican immigrants. You can find both, and both are pretty good if you know where to look.

You're kidding, right? Houston has a large Vietnamese population and excellent Vietnamese food. And also, California.

+1 Grew up in CA. Had a lot of Vietnamese friends, and of course, there is "Little Saigon".

NM, oth, lacks good diverse food choices. I looked into retiring in NM, but the lack of food choices turned me off.

+1. The largest vietnamese communities are in CA and TX. Houston has great vietnamese food.

From DC but went to Univ of New Mexico - and yes!! Chili roast this weekend (we’re getting 20lbs) and the food! Yum. What I wish we could find here are good corn tortillas.

I once at pizza in scotland because my spouse was tired of walking and the weird convenience place at our cheap hotel had pizza or haggis that was in a glass thing like they use for hot dogs at 7-11. I violated my own rule of always ordering local.

Republic Cantina in NoMa has the best Tex-Mex I've tried so far in DC. Their migas are especially good.

You do realize that Texas has a very long border with Mexico and therefore does have Mexican food. Take a look at a map or a globe.

I’ve lived in CA, NM, and TX. No New Mexican food anywhere here. But there are a few good Mexican like Gringos & Mariachis and Casa Oaxaca. But for more casual, Taco Bamba is pretty good too.

From Colorado to DC, there is no comparison. Colorado was originally part of Mexico.

You want Mexican?, you are better off making it from a YouTube video.
