My best friend's name is KathArine. And she's awesome, as is Katharine Hepburn. So clearly that's the way to go.

My DD is a Catherine (family name, standard spelling in spouse's culture) and I'm finding the strong opinions here amusing!

her name was Kate and they made her take a Saint's name when they got married.

Correct. I have known Americans with every variant listed on this thread. I personally like all of the K versions, the C is a little more plain imo.
