Spanish style spinach and chickpeas
Wilt a large bag of spinach in olive oil, add an abundant amount of minced garlic Add a can of rinsed chickpeas Season with salt and paprika Serve with crusty bread This isn’t Spanish, but my son likes it with a fried egg on top too |

I do a tiktok feta pasta inspired dish, without the pasta.
Fill a sheet pan with tomatoes plus feta in olive oil, salt and pepper. I add a can of chickpeas or white beans or cubed tofu for protein and serve with good bread. I also sometimes throw in cauliflower or onions or any other veggies laying around. |

Jambalaya:
-Sauté diced green/red peppers, onions, garlic with evoo in large pot (I typically buy pre-diced veggies because I’m lazy. I also have garlic cubes in my freezer from TJ) -Add sliced chicken andouille sausage and brown -Add large box of Zatarains jambalaya mix (occasionally I will substitute low salt chicken broth for some of the water and add a few spoonfuls of tomatoe paste for extra flavor) -Simmer for about 20-25 minutes. Sometimes I add shredded rotisserie chicken and/or a handful of frozen shrimp. Serve with a bagged green salad and hot sauce for those who want more heat. This is an easy meal on busy nights. |

Similar: Chipotle bowls: Rice, black beans, guacamole, salsa, crushed tortilla chips, sour cream. If you have avocado and cilantro around, all the better. |

Brown 1 lb ground turkey or ground beef w/ olive oil, salt, pepper Add 15 oz can diced tomatoes 1 bag frozen mixed veggies 1 packet Lipton Onion Soup Mix Low sodium chicken broth 3/4 cup orzo Bring to boil then reduce temp to simmer until orzo is cooked through |
