Much easier than you think dinners

What are your favorite stupidly easy dinners? Like, 5 ingredients is way to many. Minimal to no chopping. Probably I didn't go to the grocery store lately. More assembly than "cooking."

One of mine is Instant Pot spaghetti - everything is from the pantry and I usually have a pound of ground beef in the freezer somewhere.

Drained can of black beans (maybe two), juice of one lime, a bunch of cumin, heat and serve with chips, cheese, salsa, and sour cream. If you’re feeling ambitious, avocado and cilantro.

I think I post this one all the time, it does involve some chopping.

Get a big pot, chop up a kielbasa, put it in the bottom with about a half cup of water. Chop a head of white cabbage and dump in. Dump in bag of baby carrots. Chop up some onions, quarter them and dump in. Put on lid, simmer for 20 - 30 minutes. Serve.

Note: I have a large family, so if you a small family you probably don't need a whole kielbasa or a whole cabbage. It is, however, good left over.

How do you prepare the rice and beans?

Baked chicken breast or thighs coated in hummus, sprinkle with paprika. Comes out moist and the hummus makes a nice "crust" for the chicken.

This is good with lentils.

Bean and cheese quesadillas is my 5 min dinner. If you have frozen butternut squash purée that’s great on it too. I smash the beans down so the cheese melts with them.

Shrimp scampi on spaghetti especially if you use the prechopped garlic in a jar

If you like mussels they are ridiculously quick and easy to make if you buy them precleaned. I never order them out anymore.

This is embarrassing with how easy it is but my kids love it and it's in heavy rotation --- rice in the rice maker; can of black beans into a pot, add cumin, a bit of garlic and some pepper. Nothing else. In fact, the less I add, the more they enjoy it. You could add salsa, sour cream and cheese as toppers.

Ooooh, I bet it would be.

I also like Italian sausage and onions with lentils, Brown some sausage, add lentils, chicken stock, bag of frozen mixed veggies, can of chopped tomatoes, cover and simmer.

Mississippi pot roast in the slow cooker or Instant Pot. Google the recipe, but it’s basically a chuck roast with a packet of ranch seasoning, packet of au jus gravy mix, butter, and some jarred pepperoncinis. Dump and walk away. I add potatoes and carrots later in the slow cooker part way through.

+1 for Mississippi Roast. I throw in baby potatoes and carrots toward the end. Boom, done and it takes 5 minutes of work, if that.
