Though her face isn't classically beautiful (very few are!) she had the means to make herself very attractive: fit, cool/fun/well fitting clothes, great skin and hair, etc... which makes her more appealing than most women.

No this is for TV. She is way below average. Just put her up against the women stars from the time period. Also gay men both creators and consumers of SATC were more concerned about how the men looked vs the women. It’s like the below average guy dating very attractive women in other TV series and movies. Ed O'Neill with Sofía Vergara, Seth Rogen in Knocked Up, Everybody Loves Raymond, The Big Bang Theory’s, etc.
