She said EASY!!!!!! I make fresh pasta (time consuming) and risotto…and while risotto isn’t difficult it’s not the same as searing scallops for 5 min!

I agree. I think the first PP has confused simple with easy. Simple is relatively few steps. Easy is less time intensive. Handmade pasta is simple, but not easy. Same with Risotto.

Risotto in an instant pot is extremely easy.

Also not a one-dish meal.

those little fish packets wrapped in parchment with a nice sauce to drizzle (pesto or chimichurri or something)

I do these all the time and people are always impressed, but it is so easy! I use a thicker cut of fish like Chilean seabass. Top with garlic butter from WF and lemon slices. In the same parchment I put chopped up asparagus, halved baby tomatoes, shallots, and sliced zucchini and summer squash, but you could really use whatever veg you want. Seal up 90 percent and toss some white wine in before closing. 20 minutes at 430 degrees and it's done. I usually serve with rice, orzo, or pearled couscous. With the white wine and butter, you don't even really need a sauce. The sauce created in the parchment is great.

Do you have a good recipe? I have 2 friends who throw this together as an easy dinner with friends, but neither uses a recipe. I’d love a good recipe to try. I’ve tried a few and they haven’t been great

A little like the seared scallops, shrimp scampi is incredibly quick and has like 4 ingredients

If you time your cookies right... 5 mins out of the oven, throw on a scoop of ice cream & store-bought fudge sauce, everyone loses their mind, "warm cookie sundae!"

Poundcake. Just sacrifice the 8 eggs or so, and it is basically foolproof & no fiddling over the rise or decoration...

Google the Marcella Hazan recipe, it’s classic.

And, what is "wow" about lasagna? It is basic suburban mom made food.

Not necessarily “wow”, but delicious and easy: bone-in, skin-on chicken thighs sprinkled on both sides with a seasoning mix like Italian seasoning or herbs de Provence, kosher salt, and fresh ground pepper. Bake skin side up at 350 for an hour. Really good with almost zero effort.
