Any type of hunk o' meat is usually pretty easy - steaks, roast/grilled chicken, whole roast fish, leg of lamb, crown roast of pork, swordfish steaks
Stews/braises - coq au vin, beef Beef Bourguignon (I know some recipes for these are very fussy. The extra steps don't make a difference. These are supposed to be farmer's stews.)

I guess it depends on your definition of "easy". My definition of easy usually depends on the quantity of pots/pans dirtied by a recipe. One pot? Super easy! Anything requiring a chinois? Get outta here!

I agree. I think the first PP has confused simple with easy. Simple is relatively few steps. Easy is less time intensive. Handmade pasta is simple, but not easy. Same with Risotto.


+1 Even making lasagna takes a while especially if you're adding grilled vegetables or making your own sauce.

Risotto is extremely easy in a pressure cooker/instant pot. No stirring, completely hands off once all the ingredients are in.
