I use a thicker cut of fish like Chilean seabass. Top with garlic butter from WF and lemon slices. In the same parchment I put chopped up asparagus, halved baby tomatoes, shallots, and sliced zucchini and summer squash, but you could really use whatever veg you want. Seal up 90 percent and toss some white wine in before closing. 20 minutes at 430 degrees and it's done. I usually serve with rice, orzo, or pearled couscous. With the white wine and butter, you don't even really need a sauce. The sauce created in the parchment is great. [/quote]
