Cooking for crowd on vacation

I use mesri paste and canned coconut milk and find Thai food the easiest and fastest of all cuisines to prepare for a crowd.

I would be so disappointed to be served a middling white person version of thai curry lol

We will be in Hilton head / one family member has a large(er) home there so we will be gathering for meals there and have a real kitchen set up to work with.

Hilton head is in the 80s at spring break??

I would do burgers, but honestly this seems like a huge pain. No on wnats to do this.

Why chime in on page three having clearly not read the thread?

Someone is REALLY controlling, but that kind of fits in with the kind of person who wants to cook for 20 people. Not everyone is going to follow your rules. some people just jump in on page 3 and make their comment without reading the whole thread and asking for permission to post.

Gazpacho, baguettes, olives, cheese tray and tortilla española. You can make it all ahead of time so that you’re not cooking while 20 people are standing around.

Pulled pork. Make 2 batches in your crock pot before you go. Freeze flat in ziplocks. Keeps your cooler cold and you’re good to go.

Bring BBQ sauce with you, slider rolls, slaw. Make whatever side sounds good to you and a salad.

My family does this. It works well for us! If anyone is not feeling it, they do take out on their night.

The difference is we stay in a huge 20 person house. So the kitchen is well stocked for making huge meals. Like it has large pots, lots of plates and forks, serving dishes etc. There’s a huge table and a long counter island.

Having 20 people in a condo sounds like hell. Then trying to boil 3 pots just to make enough pasta? Also hell.

Do takeout.

If you read the thread the OP said that one family had a large home with a kitchen setup and that's where they would be gathering for meals.

It was the first thing I thought of, and what I’d do, but I resisted suggesting it.

Also, I’d make the marinade at home and bring it.

The unsolicited commentary…ha. Is cooking for 20 really this intimidating for some of you? You never ever entertain? It’s one night!

Nacho bar (queso in crock pot)…always a huge hit

Salmon and roast potatoes and a salad…not hard

If money is no object do a beef roast tenderloin. If you need to go cheaper, flank steak.

If you want to go basic b (no shame), pasta bar and can offer tomato and pesto sauce and meatballs. Garlic bread and salad.

Pork tenderloins and mashed potatoes and veggie.

Shrimp and pineapple kabobs in grill and rice.

Baked potato bar with all the fixings including chili, curry, etc.

Pasta bar with 2/3 sauce options, meat balls, grilled chicken, broiled fish, etc.

Breakfast for dinner. You can make a few quiches, have a big salad, pancakes or waffles, bacon/sausage, fruit salad, yogurt.

But why? It’s fun to you? You’re a rebel? You think you will change the OP’s planners mind?
What are we supposed to take away from this post? You just needed to get it off your chest?

OP, if someone wants to do their own thing, it won't be about the menu.
