What to do with a gallon of skim milk?

Anonymous
Accidentally bought a whole gallon of skim, which neither my kids or me is willing to drink. I'd hate to waste it. For now, we are mixing in cream to balance it out. Any suggestions for using more of it in cooking/baking?

Coco Licuados.

Add a couple of tablespoons of coconut cream and a few ice cubes to a cup of milk. Put it all in the blender. Grate some fresh nutmeg on top.

Mixing in cream will do the job. It should taste the same as the higher fat milk you're used to.

But it won't be any good with skim, unless it's out of a box.

Make a roux & make a big batch of mac & cheese or sausage gravy. I always use skim for those, and it's fine (there is plenty of fat in cheese / sausage).
