A few of my favorite easy, fast, cheap, relatively healthy pantry meals
- chickpea and coconut milk curry w rice - sauteed canned wild salmon with cous cous - lentils with rice - progresso white clam sauce with linguine We always have onion garlic cilantro parlsey and hot peppers around. These meals cook up in no time and are really handy when I don't want to spend a lot of time in the kitchen and all the ingredients last a long time in my pantry. I need more ideas to add to my pantry list! What are yours? |

Tomato and roasted red pepper soup from Costco.
Frozen spinach sautéed and blended with a can of navy beans Try different types of lentils like red etc. |

PP here. On the salmon casserole, I also leave out the chesse 'cause cheese and salmon seems gross to me. |

* Frittatas with whatever leftover vegetables/protein/cheese we have in the fridge
* We make a double-batch of pesto using whatever green we have available (right now, we have spinach/basil, recently, it was kale) and freeze in ice cube trays, to pull out and thaw for pasta * Barley "risotto" (or cooked barley or farro) with whatever vegetable and/or protein we have in the fridge |

Eggs, leftover proteins, cheese, fresh greens these aren't pantry staples |
| Kraft mac & cheese. Even if you don't have milk you can use water and won't taste the lack of milk. |
In my house, a "pantry meal" is a meal we don't have to prep or shop for, using only the ingredients we already have. Doesn't matter whether they're in our fridge or our actual pantry. Sorry if my definition doesn't match up with yours! In our actual pantry, we have 3 kinds of dried pasta (spaghetti, penne, and elbow), tuna, beans (black, cannelini, and chickpeas), and canned tomatoes (crushed, whole, and diced). We can make a mean meal with some kind of combination of those, but something fresh is always a worthy addition. |

Some good ideas here. I just wish I wasn't the only one in my family who'll eat canned tuna!
My go to pantry meal is coconut curry red lentils and chickpeas over rice. If I have some questionable greens lingering, I also really love this recipe for using them up (along with that last stale slice of bread and knob of parm):http://www.splendidtable.org/recipes/warm-white-bean-salad-with-fragrant-garlic-and-rosemary. Fresh rosemary is best, but dried works, too. |

*2 cans of clams *half a can of canned corn *half a jar of tomato sauce *can of sliced potatoes *a few strips of crumbled bacon I keep frozen in the freezer *sliced celery *sliced carrots * chicken or vege broth *spiced to your taste with salt, pepper, worch. sauce |
