making chicken soup from my own broth

What do I need to add aside from chicken and some veggies?
I got all into the crock pot and made stock from a chicken carcass and now i dont know what to do with it to make soup.
Is it bland?

It doesn't have to be bland.. That would depend on what aromatics, etc. you put in.

Aside from that, people coming to the homemade broth side after only having had commercial soup might have an adjustment period as commercial broth is loaded with sodium, so in comparison, homemade broth tastes "bland".

So, To make a "classic" style chicken soup, I would start with some good quality olive oil, and use it to sauté garlic, onions, celery and carrots. Add your broth and some chicken and a few herbs like thyme and a bay leaf or two. Add rice or noodles if that's your thing. I usually add some whole peppercorns. Simmer. You'll definitely want to add some salt to taste towards the end. I often add soy sauce instead of salt in chicken as I find it gives a little different of a flavor, but that's a personal preference.

I cook it with chicken until chicken is tender and with a bay leaf and a whole unpeeled onion. After the chicken cooks I plate it and add green onions cilantro and chopped avocado to the bowl. My Dh also adds some frozen corn kernels and cayenne.

Mine usually isn’t, but it depends upon the size of the carcass.
If it is small, I sometimes add some prepared chicken broth.
For veggies - carrots, celery, definitely onion, and herbs that you like.
I also add some rice or noodles.
Yum.
Also, I make sure to strain the broth to get out all the bones before adding the veggies.

Next time you do it, put the whole (uncooked) chicken in a pot, cover with water and add some bay leaves, parsley, whole onion and garlic cloves, a few peppercorns... Then simmer until chicken is cooked. Remove chicken, skim pot, then simmer stock some more to reduce. Strain and add any vegetables you want, then the deboned chicken and any grains. Top with some fresh chopped parsley and viola - excellent, rich chicken soup.
