Line shrimp with coconut rice, from the Williams Sonoma Weeknight cookbook. I added broccoli to the shrimp. Salad.
Tomorrow (just finished prepping) - Martha Stewart mac and cheese. I split it into two pans - one plain, one with bacon and spinach. They're ready to go, I'll pop them in the oven when I get home tomorrow. We'll eat leftovers for lunch the rest of the week. Will make a salad and maybe some steamed green beans alongside. Now enjoying a glass of wine while I tidy up the kitchen and make my lunch for tomorrow. |

Last night was 1/2 toasted bagel w/ chive cream cheese & smoked salmon.....and a slice of grocery store vanilla birthday cake =)
My BABY is turning ONE tomorrow!! She LOVED the smoked salmon.... |
