great thread!

boneless skinless chicken
diced tomatoes
chickpeas
capers
oregano

Cut up chicken and saute it in a little olive oil with salt, pepper, and oregano, add a can of tomatoes, a can of rinsed chickpeas and a handful of capers. Let that simmer for 10 mins or so. Serve over brown rice or by itself.

chicken breasts cut in strips, dredged in flour (I add cumin, chili powder, coriander, salt and pepper to flour)
bell pepper strips
onion strips
broth
salsa

cook chicken in olive oil till brown on both sides, add peppers and onions and saute until soft, add broth just to cover, top with generous scoops of salsa, let thicken a little bit. Serve alone, or with penne / rice.

Shrimp tacos

1 lb of shrimp seasoned with some chili powder, olive oil and salt and pepper

Saute in pan for a few minutes on med/high. Serve in tortillas with salsa verde and either guacamole or avocado. I usually have a side salad and call it a meal.

Frozen pizza.
Stick in 400* oven for 20 minutes.

Or

Crackers (open box)
Pre-cut cracker cheese (open package)
Apple (cut it up yourself)
Grapes (rinse them)
Wine (pour into a glass--you were not raised in a barn)

I have a baby, a stressful job, and a chronic illness that has been acting up. This is all I can handle lately. The baby doesn't eat the grapes or the wine.

Seriously though, thank you for this thread. I obviously needed some low effort ideas.

Steak (usually filets, but whatever): season with salt and pepper, grill or pan fry

Greens (kale, spinach, or chard): sautee in olive oil and garlic. salt lightly

Bread (I tend to make cornbread from scratch in our breadmaker which would exceed the ingredient limit, but you could buy a loaf of something healthy from the baker, too)

Rice
Cut up and seasoned chicken
Peppers
Little bit of tomato sauce

Mixed cooked rice and cooked chicken with the peppers and tomato sauce. Stuff into zucchini rounds.

Sprinkle with olive oil and sea salt and stick in the oven for 20 min. I also tend to put some cheese on mine to melt in the oven

I swear I'm not being snarky, but do zucchini come in other shapes?

Two ingredients casserole:

Potatoes and chicken/apple sausage.

Dice up potatoes; slice up sausages; mix them together; place in a greased casserole dish...Cook at 375 for one hour.

Serve with broccoli or green beans or green salad.

Italian sausage (hot or mild, you choose) cut up into little pieces
Onions cut up into little pieces
Granny smith apples cut up into little pieces

Cook the sausage about half way in a pan, add onions, cook some more, add granny smiths cook until done.

Fast, easy, one pan dinner if you consider onions enough of a vegetable. If not, and you have my particular kids, serve with frozen peas still frozen.

Would this work with a fish? not shrimp/shellfish?

We have turkey tacos once a week. I add a can of black beans to the turkey for extra protein/fiber. Or, serve with a can of refried beans. Chop tomatoes and avocado on top. Cheese optional. We sometimes make taco bowls with brown rice instead.

I recently discovered this recipe for cuban picadillo and it is delicious and so easy to make. A few more than 5 ingredients if you include the spices, but quick and tasty

http://www.skinnytaste.com/2008/03/picadillo-6-ww-pts.html

One night each week we also have salmon - we get the wild salmon frozen fillets from costco. Can even cook from frozen. We thaw and roast for 20 minutes at 400. Just sprinkle any seasoning on top - we use the costco no salt seasoning or williams sonoma potlatch. Cook asparagus on stove top with olive oil and garlic.

Not the original poster, but I've done something similar with a firm white fish like halibut cut into cubes. Swordfish would probably also be good. I think a thinner fillet like tilapia would fall apart too much for my taste, I like the chunks of fish.

Meatballs:
One slice of sandwich bread, crust removed
2 Tb milk
1 egg
1 lb ground meat (beef, pork, turkey, whatever)
Seasonings to taste - salt & pepper, or some sort of spice blend (I like the Bavarian seasoning blend from Penzey's)

Put the bread in a medium bowl, pour the milk over it, mash together. Add the egg and scramble with a fork, mixing into the bread. Add the meat and seasonings, mix together. Roast or pan-fry until cooked through; serve with rice/pasta and a veggie. (Can also cook in a tomato purée, but that would have exceeded 5 ingredients).

Spaghetti w/ meat sauce
Diced onion
Garlic
Ground beef
1 can Crushed tomatoes
Italian seasoning

Sauté the onion & garlic, add the meat, brown, pour off any fat. Add the crushed tomatoes and Italian seasoning, simmer until thickened. Serve over pasta.
