I have a Work Sharp that I use when the knives get too dull. I only use two knives, paring and chef. In between I will sometimes steel a knife on the back of another knife.

If I need a razor edge, I will use diamond whetstones. That's a super pain in the a$$ and never necessary.

+1 I have a bunch of pricey Japanese knives. I send them out to a pro about once a year.

So most of the time your fancy knives are not sharp. Why even bother having them?

A good knife sharpener is not cheap and I would rather have consistently sharp knives I replace every 10 years than expensive knives than are sharp one month out of 12.

I have over 30 knives for different purposes. They remain sharp a lot longer than a month.

Yes, I have a sharpening stone that I use once every 3-6 months on the knives that I use most regularly. Annually or less for the knives I don't use as often, whenever they feel less sharp. I also have a honing rod that I use for quick touch-ups on a regular basis, probably every week or two.

For our cheaper knives I just use the butt of a ceramic mug, works in a pinch when I'm too lazy to take out the knife sharpener. For our more expensive knives we take them to Sur La Table to get sharpened.
