If you happen to like chickpea pasta, Banza is great. I just add tomato sauce and parmesan cheese. If I'm feeling ambitious I add roasted broccoli. My kids and husband don't like it though.

I love this thread too!

I'm not taking care of children right now, so this is geared toward my palate alone.

1. I always have some hard-boiled eggs in fridge. I'll whip up a quick egg salad with the peeled and minced egg with minced green onion and celery, adding Greek yogurt, mustard, salt, pepper, maybe a little dill. Serve on toast or crackers.

2. Or a faux-Nicoise with some boiled potatoes (I usually have these in fridge, too) and green beans with canned tuna and sliced egg, salt, pepper, dash of lemon.

3. Storebought or homemade granola with oatmilk and extra nuts & dried fruits.

4. Mash some sardines with a little cream cheese, mustard, and dill to spread on Wasa bread as sardine rillettes. Pickle on the side.

5. Baked chips with hummus and/or salsa with some black beans thrown in.

6. A ploughman's lunch with cold chicken schnitzel (cubed), different cheeses, pickles, fresh fruit, and/or figs.

7. Dice some boiled potatoes from fridge to make hash browns and top with egg.

8. Smoothie with frozen fruit, greek yogurt, cucumber.

I didn’t read all the responses so maybe someone said this but ground meat is your best friend if you need easy and quick. Ground beef, bison and lamb are so flavorful that we season with just salt and eat it plan with a side of vegetable. For chicken or turkey, it takes more effort to season it and/or make a sauce. But ground chicken with a quick soy based sauce and veggies is an easy stir fry.

Ground beef + broccoli or peas
Bison + sweet potato
Lamb + potato

Etc.

In summary, keep ground meat and frozen veggies around!

I like the freshness it adds to a fruit smoothie instead of adding juice (too much sugar disagrees with me).

I sometimes add a chunk of watermelon and love the refreshing taste it adds; but that is more sugar. I'll give the cucumber a try - thanks for posting!
