What is your go-to potluck contribution?

Roasted jeweled veggies goes over great. I pick 3 veggies in a variety of colors such as beets, carrots or squash, and Brussels sprouts in EVOO and S&P. You can add chickpeas for the last 10 minutes w/ a little more EVOO and a sprinkle of balsamic. Before serving, toss with some arugula and some herbed goat cheese or ricotta salata cheese.

Another easy go-to is sturdy crackers (such as pita crisps) with a smudge or crème fresh, a sprig of dill, and some smoked salmon. Sprinkle them with everything bagel seasoning. They look and taste great and don’t require you to turn on a burner.

Tortellini salad: toss cooked Tortellini with a jar of pesto sauce. Add small cherry tomatoes cut in half, add a handful of pine nuts. Chill overnight.

Smitten kitchen butternut squash and chickpea salad. It's quicker if you buy precut squash. Then you just make the dressing while the squash is roasting. It's good hot, cold, or room temp and it's vegan and gluten free.

Anonymous wrote:I second the idea of a nice green salad. It offsets some of the heavier/fattier foods that often show up at these things. I also like to make a black bean and corn type of salad with sliced cherry tomatoes, cilantro, yellow or orange peppers, red onion, and lime juice. Can use either canned or frozen corn, and canned black beans (rinsed). Can be either a side dish or served with tortilla chips as a salsa.

Agreed. I will always eat green salad.

I go for the meatballs.

I get the salad kits from Costco. They take 30 seconds to make and everyone always says how good they are. The sweet kale crunch is my favorite since it holds the dressing so well.

My high schooler has a potluck tomorrow and she asked for the Costco kale salad kit, because "most the other food is crap."

I for, one, like a crock pot meatball (with Raos) and some buffalo chicken dip

I love a hot wing. You can make them in the cheap or order from a spot.

For the grape jelly or cranberry sauce mixed with chili sauce, what is this chili sauce? Is it a ketchup based one that comes in a round jar or something spicier, like enchilada sauce?

I always love this. It's just a challenge keeping it warm.

For this particular potluck, they don't need anymore desserts or clearly easy things (like rolls). So I guess I'm looking for a main, a side, or a veggie option. I can cook more complicated things, but I have very little energy remaining at this point in the holiday season so bonus points if it's easy.

Do you have any tried and true dishes that you care to share? Inspire me!

Meatballs with grape jelly and chili sauce

Thank you - I hadn't yet thrown up today, but promptly did after reading that.

It's totally vile but the older Midwesterners will defend this to the death, so watch out!
