Just got this email from a villa company I regularly use for rentals along the Tuscan coast (we typically fly into Rome, pick up rental car, drive up coast for 1.5 to 2 hours):

OP here-thanks for the great suggestions and also affirming that certain popular destinations will be booked, crowded, etc. We completely recognize we are late to the party, so we don’t have any super specific locales in mind.

We are now thinking Scandinavian countries first two weeks of August. A beach area would be nice for a few days, but really open to anything. We are physically active. No real budget constraints. Ideas?

see if you can find a villa for rent either in the the South of France or somewhere like Croatia and then find out how you might get there - a combination of flights and trains is most likely scenario

Denmark has some good farm holiday locations. Run a search to see if they have any space. You might get lucky.
