I have a marinated beef brisket which was in the refrigerator until I put it in the slow cooker at noon. I just realized I couldn't smell it cooking. Because, duh, I didn't plug in the slow cooker. So it's been out of the refrigerator for 3.5 hours at room temperature, uncooked. I already forgot to start it this morning when I started working, so I put it on high instead of low.
I plugged up the slow cooker, but maybe I should just pitch it? Also, what's for dinner tonight? Working from home and DH is traveling, so this totally ruins my plan to walk in from daycare pick-up and dinner is ready. Sounds like a takeout night! |

There's no way it's bad at all. Heck, I've marinated beef at room temp almost that long (like 2 hours). |

Beef is pretty safe as most of the bacteria is on the surface. You're supposed to bring steak, etc. to room temperature before you cook it; and the slow cooker would insulate the cold a little too so it wouldn't quite be at room temperature.
I'm a food safety freak (99% of these threads I'm one of the throw it out people) and even I'd just be sure it's completely cooked before eating - and that goes without saying for a brisket anyway. |

| I would eat it since it's beef, if it was pork maybe not. and since you are cookin it in the slow cooker you can make it extra well done and it should still be tender. I would go for it. I would probably give my toddler a little bit of it and then load them up with the sides. |
