recipe for mushrooms

I had a mushroom craving, and I bought a big pack of baby bella mushrooms at Costco. Can anyone recommend a great recipe to use them, especially something healthy and/or low carb? Thanks!

I'm not a huge mushroom fan, but my whole family eats them when I do either of these recipes:

Healthy, easy and delicious. Even my picky DH likes it.

Sprinkle salt & pepper on a few chicken thighs, brown in a skillet. Remove from pan. Add a couple Tb oil, a sliced onion, and a bunch of sliced mushrooms (as many as you can fit in the pan). Sauté until soft. Add the chicken back in. Add a cup or two of white wine and/or chicken broth. Simmer until the chicken is cooked through. You can also add herbs like thyme or rosemary. Serve with brown rice or mashed potatoes.

Or, slice and sauté in a ton of butter, with salt and pepper to taste. Add a dash of Worcestershire at the end. Serve over steak.

You could also make one of those chicken / pasta casseroles, with real mushrooms and white sauce instead of Campbell's cream of mushroom soup.

As a side:

heat 1-2T olive oil in a medium sized skillet with a lid. Slice mushrooms and put in skillet on medium heat. Toss to coat and add salt and pepper, then cover for a few minutes. Stir occasionally. When mushrooms have reached your desired consistency, splash a small amount of balsamic vinegar (or soy sauce if the rest of your meal is Asian-oriented). Let the liquid cook off and serve as quickly as possible.

I like to skewer them onto skewer sticks, brush with BBQ sauce and grill them next to steaks. YUM
