Hi, we need some help. We eat so much frozen broccoli it's coming out of my ears. I used to do roasted cauliflower, but need at least a couple of more options. My daughter and I are pretty good at eating our vegetables, but I have no new ideas.
Nothing with soy or nuts (allergies). Prefer cooked as opposed to salad. |

| I've been making a lot of simple summer squash soup. Sauté a chopped onion, add garlic, then add several grated summer squash and a cup or two of chicken broth. Simmer 15 min and blend with basil. Salt to taste. |
| Kale chips, cooked but cooled, make a nice side for cold summer meals. I make little chippy things with the leaves of brussel sprouts too that are very yummy. |
| How about grilled eggplant, zucchini and summer squash? Slice, brush with oil and seasoning and place on the grill at low-medium heat. Can be served hot or cold, with a splash of balsamic. |

corn (TJ's has a really good frozen roasted corn or on the cob) crudité & dip asparagus grilled eggplant served with tzaziki (SP?) sautéed carrots steamed beets (watch out for stains!) sautéed kale or spinach or beet greens roasted butternut squash or potatoes or sweet potatoes (BTW I just read you can cook sweet potatoes in the crock pot - just pierce them and put them in there for a few hours!) |

I also like zucchini and summer squash cut up with onion and microwaved with a little butter and S&P. My husband likes to sauté them with onion and adds some tomato paste. |

Roasted anything is nice: sweet potato sticks, kohlrabi (my DD's personal favorite), brussels sprouts, asparagus, etc.
I know this is not as popular, but I'm also big on okra (just steamed), it's so good at the farmer's markets in the summer! I also like to do corn on the cob and squash on the grill in the summer, as some PPs have mentioned. |

I think any veggie is better when grilled or roasted! Here are a few veg sides in our rotation:
roasted broccoli dusted with parm cheese honey carrots (slice carrots into chunks and steam or simmer on stovetop for 5 min or so - toss with a dab of butter and honey and if you have it, thyme and lemon zest) steamed green beans and fresh cherry tomatoes, halved, tossed in balsamic dressing corn on the cob caprese salad stir fries with all sorts of veggies roasted brussel sprouts (evoo and s/p), can roast with bacon for newbies to brussel sprouts fresh sliced colored peppers and snow peas with ginger dressing for dipping |

The regular rotation in our house this summer:
-Green beans, sauteed with garlic and olive oil -Sweet potatoes, cut and roasted -Corn on the cob (sometimes grilled) -Spinach, sauteed with garlic and olive oil -Cucumber salad -Broccoli, sauteed with olive oil, garlic, red pepper flake and lemon added at the end -Sugar snap peas, quick saute with soy and butter -Roasted asparagus with olive oil and S&P |
