What is something easy to bbq when friends come over? I am already tired of the costco hamburgers and hotdogs. I need some new ideas that are easy to make for a small group (maybe 12). Thnx! |

Ribs! If you have the time. I buy the Costco pork ribs that come three slabs to a pack. I put a rub on them and then cook them low and slow (about 2 hours) on the grill. You can add your favorite BBQ sauce in the last 15 minutes or so.

Marinate shrimp right before you grill in some olive oil, Old Bay, salt and pepper. Grill a couple minutes on each side. Shish kabobs are always good, we do lemon pepper chicken breasts, ribs. |

Instead of plain hot dogs, buy fresh andouille sausages. |
By "barbecue," do you mean grill? Or are you actually making barbecue? If you are, I'd say a pork butt. |

Chicken is easy. There are a million marinades out there--google is your friend. (If you have any doubt, any marinade by Steve Raichlen is reliable.) You can do individual pieces: bone-in--thighs and drumsticks are super easy. Or even easier, do boneless breasts. If they're small and sized for sandwiches/individual portions, grill them as is. If they're big, slice them horizontally in half so they're not as thick. They'll cook more quickly and evenly. Remember, if you're using a bottled sauce, don't brush it on until near the end of cooking, and don't keep the flame too high. That sauce has sugar in it, and sugar burns. If you're going to brush on more of your homemade marinade, set some of the marinade aside at the beginning, that never touched chicken, and use that. Don't brush on the marinade your chicken was soaking in, or you'll re-contaminate it with its own raw juices. |
Sausages. Bratwurst, Kielbasa, Hot Italian, or any one of the million custom flavors they make these days.
In a big cast iron pan, fry up some onions and peppers to go along with. Have sauerkraut for people who like that. |
