I agree with ribs - you can smoke them in advance and just toss them on the grill at the last minute to char them up.

Serve them with creamed spinach, a salad and corn bread which can both easily be made in advance.

Besides, it's less work - you just put the plank with the fish on it on the grill and take it out 15-20 minutes later. No turning, no risk of pieces breaking apart.

Love ribs, and kabobs. Kabobs can be beef, pork, chicken, sausage, whatever. We grill them with red onions, peppers, maybe tomatoes. Soooooooo good.

For dessert, grill peach halves, and drizzle with honey, cinnamon, and serve with a scoop of vanilla ice cream. Delish.

pizza! Easy (have toppings ready to go) and we'll use pitas, tortillas, or flatbreads for the crust sometimes. Also good if you have a mix of eaters - some can be veggie, meat, etc.
beer can chicken as PP said - or, if you don't want to do a whole chicken, grill quarters and some sausages. Yum.
Grill slices of potato and red onion, then toss with vinaigrette and top with parsley. I bet some bacon crumbled on top would be amazing.
pineapple spears are easy to grill along side chicken, ribs, etc

+1. SO good. I use the cedar planks at Costco and the rub recipe that comes inside the package and the salmon is delicious.

For grilling, Korean flanken style cut short ribs marinated in soy sauce, garlic, ginger and sesame seeds. Similar marinade can be used for chicken.

For BBQ, ribs take 4 hours to do properly and pork butt will take you 10, but taste like heaven and totally worth it. Not all of that needs to be in the smoker as you can do some in the oven after it gets most of the smoke flavor in the first few hours, but you'll want to finish back on the grill for a nice bark on the outside.

Corn on the cob is fantastic on the grill - much better than boiling it IMO. Husk the corn before putting it on the grill, otherwise it just steams it, really. Flip it often.
