Cook's Country Antipasto Pasta Salad. A pain in the keister to make the first time, but so popular and delicious. Even snobs deign to try it! My three year old will scarf it down like nothing else, and requests it by name.

I love barefoot contessa's roasted veg and orzo salad. I made it with quinoa this week and it is very, very good.

Italian - black and green olives, chopped sundried tomatoes, roasted red bell peppers, feta cheese, parsley and basil, grape tomatoes, balsamic vinaigrette

Guilty, guick pleasure - pasta, frozen peas, other veggies I have on hand such as carrots, olives, some of the above, grape tomatoes, quick squeeze of wishbone italian plus a bit of cider vinegar, and top with texas toast butter and garlic croutons. It's not gourmet, but it's excellent.

Why not deep-fry some ravioli, drench in Campbell's soup, add some tinned green beans, coat in a thick layer of Kraft cheese, fry again, then coat in powdered sugar?

Huh? Because of 6 croutons you think this is fattening?

BTW, I weigh 120 lbs and an 5'6'' and love every bite of what I eat, which includes both hi- and low-brow foods. So you can take your quinoa cleanse and suck it through a hollow cheeto straw.
