Haven't tried this one, but the roasted shrimp and orzo salad, by Barefoot Contessa, was really good. I've heard the roasted vegetable one is excellent. |

Pesto, or use sundried tomatoes and olives and mozzarella! Yummmmm I love pasta salad.

Go search the archives; it's totally worth it to read her opinions about how anyone who enjoys pasta is worthless trash. I want to say there's something that really gets her goat about cold pasta, and how that's completely contrary to how pasta is intended to be eaten, but I can't remember. I would love to serve her some of the sweet pasta salads I ate as a Midwestern child, just to see her squirm. They involve Cool Whip, IIRC, which I'm sure she finds a food akin to beating your child with a broom. |

| I use Vegetable Radiatore from Trader Joe's and thrown in frozen peas, crumbled bacon, black pepper, olive oil, and a squeeze of lemon. It is good the night I make it and keeps well in the fridge. |
| I'm not the pasta salad hater, but as someone who loathes mayonnaise, I've never liked pasta salad. Until I started watching the Food Network and discovered really good pasta salad doesn't have to contain mayo! Now I love it. |

Oh my god, I tried one of these recently. It was bizarre. Little tiny pasta with cool whip and and pineapple and mini marshmallows. I think it was called Frog Eyes or something? The kids ate it up but I was totally grossed out (and I'm not the crazy pasta salad lady). I made Pioneer Woman's Spicy Pasta Salad that has chipotle adobo in the dressing and cubes of smoked gouda. I prefer non-mayo pasta salads, but this one was a big hit! |

Ha! That's exactly the sweet salad I'm talking about! We called it Acini de Pepe (which I believe is the name of the pasta). It's so good in the way that those of us who grew up with some processed foods enjoy. Logically I know Cool Whip is sweeteners, oils, and stabilizers - I still like it. Although I don't know the last time I actually bought it |
