I like Deborah Madison's books. Her 'Vegetarian cooking for everyone' covers range of simple to fancy dishes.
Jack Bishop also has a couple of excellent vegetarian books. |

| 'Plenty' is a lovely book, as are all the others by Ottolenghi. However they are not the best options for quick weekday meals as the OP asked. Amazing cookbooks though. |

| Two of my favorites for week night dinners are Moosewood Restaurant Simple Suppers and Moosewood Restaurant Cooks at Home. The first one has better pictures (which always help inspire me). |

Love simple suppers as well. Not a big fan of other moose wood cookbooks. Recommend checking some of these recommendations out from the library before purchasing. |
| Just posted above and wanted to add that I also have Plenty. I love to cook and regularly use unusual ingredients but I have never once made a recipe from this book. It was a gift. The recipes boggle my mind- not for the beginner. I suspect whoever recommended it was just a showboating food snob. |

I'm not a real cook or anything, but despite my lack of skills I've made recipes from this book. There are a couple that are my favorites, like the one with chard (or kale), chickpeas, and greek yogurt. But I agree that these recipes are not for the beginner and they do require a certain time commitment. But you can always do a few shortcuts, and once you've made something a couple of times then it goes faster. I have "Quick Vegetarian Pleasures" which has some good recipes. (Some are bland/blah but some are great.
