There are a couple that are my favorites, like the one with chard (or kale), chickpeas, and greek yogurt. But I agree that these recipes are not for the beginner and they do require a certain time commitment. But you can always do a few shortcuts, and once you've made something a couple of times then it goes faster. I have "Quick Vegetarian Pleasures" which has some good recipes. (Some are bland/blah but some are great.
