So tired of boneless, skinless chicken, but I make a lot because it cooks quickly. How should I prepare it tonight? No tacos, just had those. I have plenty of pantry staples.

Stop buying it. Expand your horizons. There are other things that cook just ask quickly as boneless skinless chickien. Like pork chops. Fish and shrimp cook even more quickly. Stop. Just stop the cycle.

couple that i rotate:
chicken masala (foodnetwork recipe)
chicken stir fry with veggies

You could make pulled chicken in the Dutch Oven.

1 onion chopped
some garlic minced
saute in EVOO with some smoked paprika

when soft, add chicken in kabob-sized chunks, then add 1.5c BBQ sauce of your choice, bring to simmer, cover with lid and put in oven at 350* for ~90 minutes.

Shred with forks. Enjoy on sandwiches!

Pound it until thin. Salt and pepper generously. Dredge in flour. Heat nonstick pan. Add a little butter and oil. Cook 5 mins on each side. Remove from pan. Add a bit of butter and juice from 1/2 lemon. Add chicken back. Taste and season.

I love the Thai green curry sauce from Trader Joe's with seafood or chicken. Serve with rice or rice noodles.

Slice a pocket in the side and stuff with caramelized onions and cheese (goat, parm, cheddar -- whatever you got). Sear in a pan or just bake till done. You can also coat in panko.

Cut it up in pieces and brown it. Throw some simmer sauce on it, steam some rice, and call it a day. I like the Patak brand simmer sauces. Or make your own sauce if you are so inclined.

Quickie chicken pot pie:

Slice and saute the chicken. Stirfry whatever veggies you have on hand. Make a white sauce. Mix all these things together, pop into a casserole dish.

Top with (a) a sheet of puff pastry, bake 25-30 min; (b) bread or cracker crumbs and a few knobs of butter, bake 15-20 min

Seconding the chicken piccata (or whatever it's called) recipe above, with the butter/lemon sauce and capers. Even my kids love it.
