Healthy muffin recipes

I love muffins. But the ones I make with lots of butter and sugar are not being good to my body. Any suggestions on yummy muffins that are healthy too? Hopefully under 150 calories each?

Would this work?


Basic Muffin Recipe

2 cups flour
1 cup sugar
2 eggs
1 cup milk
1/2 cup oil (I used canola)
1 tsp. vanilla
1 tbsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt

Mix all ingredients together till smooth.
Add whatever fruit you want and blend in. Spoon into cupcake lined muffin tins.
Bake at 350 about 20-25 minutes until done.
Makes 12 large muffins.

CARROT CORN MUFFINS

1 c. shredded carrots
1 c. yellow cornmeal
1 c. flour
3 tsp. baking powder
1 tsp. salt
3/4 c. milk
2 tbsp. oil
1/2 c. honey
2 eggs

Sift dry ingredients together. Add beaten eggs, oil and milk. Bake in greased muffin tins 20 minutes at 400. Makes 12 muffins.

There are some good ones on skinnytaste.com. For the ones that call for all purpose flour I substitute whole wheat pastry flour. The pumpkin ones and banana ones are both very good.

I use almond flour for my muffins. No butter, sugar or honey. 4 eggs. Applesauce and blueberries. I will try to find the recipe, but should be easy to find under paleo muffins.

These are the best!!
Gluten free, kids love them, etc. I add almond butter (and coconut and flax) and use apple sauce instead of oil.

Google recipesU using white whole wheat flour and oatmeal. Reduce the sugar. 1 cup of sugar for muffins is way too much. Also use applesauce instead of egg.

No way those are under 150 with a whole cup of sugar. Try cutting the sugar to half a cup!

Be forewarned-- they are not very sweet at all. I do enjoy them with a cup of tea / coffee, though.

I was going to comment about how much oil was used. Doesn't sound THAT healthy. In fact, isn't that what most muffins have and OP was asking for something other than the usual oil/butter/sugar-type recipes.

OP - try subbing out oil for applesauce (non sweetened kind). You can also try baking bran muffins which aren't terribly sweet and high in fiber (although one could argue taste bland but you could add some berries to sweeten it up).

Lol. Dont kid yourself. Muffins are cake. We just want to admit we eat cake for breakfast.

I use a recipe for pumpkin bread. I use coconut oil instead of butter. Honey instead of sugar and the purée/pulp leftover from juicing for the pumpkin purée. Wheat flour and throw in a few mini choc chips.
I also make them into mini muffins. They're a great sweet treat and the kids love them.
