In fact, isn't that what most muffins have and OP was asking for something other than the usual oil/butter/sugar-type recipes. OP - try subbing out oil for applesauce (non sweetened kind). You can also try baking bran muffins which aren't terribly sweet and high in fiber (although one could argue taste bland but you could add some berries to sweeten it up).[/quote]
